A quick and easy homemade carrot cake made right in the air fryer! This cake is moist, fluffy, and topped with a creamy frosting—perfect for a simple dessert or sweet treat.

Ingredients
  

For the Cake:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/4 cup chopped nuts optional
  • 1/4 cup raisins optional

For the Cream Cheese Frosting:

  • 4 ounces cream cheese softened
  • 2 tablespoons butter softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat the Air Fryer – Set your air fryer to 320°F and grease a 6-inch cake pan.
  • Mix Dry Ingredients – In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Mix Wet Ingredients – In another bowl, whisk together eggs, brown sugar, white sugar, vegetable oil, and vanilla.
  • Combine – Gently fold the dry ingredients into the wet mixture, then stir in grated carrots, nuts, and raisins if using.
  • Bake – Pour batter into the greased pan and place in the air fryer. Bake at 320°F for 30-35 minutes, checking with a toothpick at the 30-minute mark.
  • Cool the Cake – Let it cool completely before frosting.
  • Make the Frosting – Beat together cream cheese, butter, powdered sugar, and vanilla until smooth.
  • Frost & Serve – Spread frosting over the cooled cake, slice, and enjoy!
