This Air Fryer Cheesecake is rich, creamy, and incredibly easy to make—no water bath or long baking times required! With a buttery graham cracker crust and smooth cheesecake filling, this is the perfect air fryer dessert for any occasion.

Ingredients
  

For the crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons melted butter

For the filling:

  • 8 ounces cream cheese softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons sour cream

Instructions
 

Make the Crust

  • Mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press the mixture into a 6-inch springform pan.
  • Air fry at 325°F for 5 minutes, then set aside.

Prepare the Cheesecake Filling

  • Beat cream cheese and sugar until smooth.
  • Add egg, vanilla, and sour cream. Mix until just combined.
  • Pour the filling over the crust and smooth the top.

Air Fry the Cheesecake

  • Set air fryer to 300°F.
  • Place cheesecake in the air fryer basket and cook for 20-25 minutes until the edges are set but the center is slightly jiggly.
  • Let the cheesecake cool at room temp, then chill in the fridge for at least 2 hours before serving.
