Ingredients
  

  • 1 cup cooked shredded chicken
  • 1 cup coleslaw mix or shredded cabbage & carrots
  • 2 green onions chopped
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1 tsp sriracha optional
  • 12 spring roll wrappers
  • 1 egg beaten (for sealing)
  • Cooking spray

Instructions
 

Make the Filling

  • In a bowl, mix together the chicken, coleslaw mix, green onions, soy sauce, sesame oil, garlic powder, ginger powder, and sriracha until well combined.

Wrap the Spring Rolls

  • Lay a spring roll wrapper on a clean surface in a diamond shape.
  • Place 2 tablespoons of filling near the bottom.
  • Fold the bottom corner up, tuck in the sides, and roll it tightly.
  • Brush the edge with beaten egg to seal.

Air Fry to Crispy Perfection

  • Preheat air fryer to 375°F (190°C).
  • Lightly spray spring rolls with cooking spray.
  • Arrange in a single layer in the air fryer basket.
  • Air fry for 8-10 minutes, flipping halfway, until golden brown and crispy.

Notes

  • Make ahead – Freeze uncooked spring rolls and air fry straight from frozen (add 2-3 minutes).
  • Reheating – Pop leftovers in the air fryer for 2-3 minutes to get crispy again.
  • Veggie option – Swap chicken for tofu or mushrooms!
