Ingredients

  • 4 bone in skin on chicken thighs (boneless works too but cook a little less)
  • 2 tablespoons olive oil
  • Juice and zest of 1 lime
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional for more heat
  • Salt and black pepper to taste
  • Fresh cilantro and extra lime wedges for serving

Instructions

Step 1: Prep the Chicken

  • Pat chicken thighs dry with paper towels so the skin crisps up better.

Step 2: Make the Marinade

  • In a bowl, mix olive oil, lime juice, lime zest, chili powder, smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper.

Step 3: Coat the Chicken

  • Rub the marinade all over the chicken thighs. If you have time, let it marinate 20–30 minutes or overnight in the fridge.

Step 4: Air Fry

  • Preheat air fryer to 380°F (190°C). Place chicken thighs skin side down in the basket. Cook 10 minutes, flip, then cook another 10–12 minutes until skin is crispy and the inside reaches 165°F.

Step 5: Serve

  • Top with fresh lime juice and cilantro. Serve hot with rice, veggies, or tortillas.

Notes

Tips

  • Do not overcrowd the air fryer basket. Cook in batches for crispier skin.
  • Use a meat thermometer to check for 165°F. No guessing.
  • Pat chicken dry before seasoning to make sure it gets that crispy air fryer chicken texture.
  • Adjust spice for kids—skip cayenne for mild flavor.

Variations

  • Sweet and Spicy: Add a spoon of honey to the marinade for a sweet kick.
  • Garlic Lovers: Double the garlic powder or add fresh minced garlic.
  • Mexican Style: Serve in tortillas with salsa, avocado, and corn for a taco night twist.
  • Low Carb: Pair with roasted cauliflower rice or zucchini noodles instead of regular rice.
