Ingredients
  

  • 1 medium eggplant sliced into ½-inch rounds
  • 1 teaspoon salt
  • 1 cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan cheese grated
  • 1 egg beaten
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • Cooking spray

Instructions
 

Prep the Eggplant

  • Lay eggplant slices on a paper towel, sprinkle with salt, and let sit for 15 minutes.
  • Pat dry with another paper towel.

Set Up the Breading Station

  • In one bowl, beat the egg.
  • In another, mix panko, Parmesan, garlic powder, Italian seasoning, and black pepper.

Bread the Eggplant

  • Dip each slice into the egg, then coat with the breadcrumb mixture.

Air Fry the Eggplant

  • Preheat air fryer to 375°F (190°C).
  • Spray air fryer basket with cooking spray.
  • Arrange slices in a single layer and air fry for 8-10 minutes, flipping halfway.

Add Sauce & Cheese
