Servings 8 brownies

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon instant espresso powder
  • 1/2 cup chocolate chips

Optional extras:

  • extra chocolate chips for topping nuts, or peanut butter swirl

Instructions

Step 1: Prep the pan

  • Grease a small air fryer-safe pan lightly. A 7-inch round pan fits perfectly in most air fryer baskets.

Step 2: Melt the butter

  • Melt the butter in a microwave-safe bowl or on the stove. Stir in sugar until smooth.

Step 3: Add eggs and vanilla

  • Beat in eggs one at a time, then stir in vanilla extract.

Step 4: Mix dry ingredients

  • In a separate bowl, whisk together cocoa powder, flour, salt, and espresso powder. Gradually fold into the wet mixture until just combined.

Step 5: Add chocolate chips

  • Fold in chocolate chips. You can reserve a few to sprinkle on top for extra gooey pockets.

Step 6: Air fry the brownies

  • Pour batter into prepared pan and smooth the top. Air fry at 330°F (165°C) for 18–22 minutes. Check with a toothpick; it should come out mostly clean with a few crumbs.

Step 7: Cool and slice

  • Let the brownies cool for at least 10 minutes before slicing. This keeps them fudgy and easy to cut.

Notes

Tips

  • Sprinkle a little extra espresso powder on top before baking to enhance the coffee flavor.
  • Add extra chocolate chips or chunks for a gooey texture.
  • Use silicone molds or smaller pans for mini brownies; baking time may be shorter.
  • Let brownies cool completely before storing for the best texture.

Storage

  • Store at room temperature in an airtight container for 3–4 days.
  • Wrap individually and freeze for up to 2 months. Thaw at room temperature or warm slightly in the air fryer before eating.

Variations

  • Peanut Butter Swirl: Drop small spoonfuls of peanut butter on top before air frying and swirl with a toothpick.
  • Nutty Brownies: Fold in chopped walnuts, pecans, or almonds for added crunch.
  • Extra Chocolate: Use chocolate chunks instead of chips or mix in white chocolate for contrast.
  • Espresso-Free: Skip espresso powder for plain chocolate brownies that are still rich and fudgy.
