Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 large eggs
  • cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • ½ cup sour cream
  • 1 tsp vanilla extract

Optional Glaze:

  • ½ cup powdered sugar
  • 1-2 tbsp lemon juice

Instructions
 

Preheat & Prep:

  • Preheat air fryer to 320°F.
  • Grease a small loaf pan (or line it with parchment).

Make the Batter:

  • Beat butter and sugar until fluffy.
  • Add eggs one at a time, mixing well.
  • Stir in lemon juice, zest, sour cream, and vanilla.

Mix Dry Ingredients:

  • In another bowl, whisk flour, baking powder, and salt.
  • Gently mix into the wet ingredients—don’t overmix!

Air Fry the Cake:

  • Pour batter into loaf pan and smooth the top.
  • Bake at 320°F for 30-35 minutes.
  • Check doneness with a toothpick—if it comes out clean, it's done!

Cool & Glaze (Optional):

  • Let the cake cool for 10 minutes, then remove from pan.
  • Mix powdered sugar + lemon juice and drizzle over cake.

Notes

  • Check early! Air fryers vary—peek at 30 minutes.
  • Room temp ingredients = better texture!
  • No sour cream? Use Greek yogurt instead.
