- 2 tbsp olive oil
- 3 garlic cloves minced
- 2 tbsp fresh lemon juice about 1 small lemon
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Add-Ons:
- Chopped veggies for skewers bell peppers, red onion, zucchini, cherry tomatoes
Marinate the Chicken
In a large bowl, combine chicken chunks, olive oil, minced garlic, lemon juice, oregano, smoked paprika, salt, and pepper.
Toss everything together until the chicken is well coated.
Marinate for 15 minutes (or up to 1-2 hours for more flavor). If you’re short on time, you can skip this, but it tastes better if you let it sit.
Assemble the Skewers
Soak wooden skewers in water for 20-30 minutes if you’re using them.
Thread the marinated chicken pieces onto the skewers. If you’re adding veggies, alternate chicken with veggies like bell peppers or onions.
Cook in the Air Fryer
Preheat air fryer to 380°F (193°C) for 3-5 minutes.
Place skewers in a single layer in the air fryer basket (don’t overcrowd).
Cook for 10-12 minutes, flipping halfway through.
Use a meat thermometer to check that the chicken reaches 165°F (74°C) internally.
- Don’t Overcrowd: Leave space between chicken pieces for even cooking.
- Marinate Longer: If you have time, marinate for up to 2 hours for maximum flavor.
- Leftovers? Store in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 3-4 minutes.
