Ingredients
  

  • 2 large boneless skinless chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • teaspoon garlic powder
  • ½ teaspoon paprika
  • 4 oz cream cheese softened
  • ½ cup shredded mozzarella or preferred cheese
  • ¼ cup cooked spinach optional
  • ¼ cup sun-dried tomatoes or cooked turkey bacon bits
  • ½ teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions
 

Prep the Chicken

  • Butterfly the chicken breasts (slice in half almost all the way through so they open like a book).
  • Season both sides with salt, pepper, garlic powder, and paprika.

Make the Filling

  • In a bowl, mix cream cheese, mozzarella, spinach, sun-dried tomatoes (or bacon), and Italian seasoning

Stuff & Secure

  • Spoon the filling inside each chicken breast and fold it closed.
  • Secure with toothpicks or press edges together firmly.

Air Fry the Chicken

  • Lightly brush the chicken with olive oil.
  • Preheat the air fryer to 375°F (190°C).
  • Place stuffed chicken in the basket (don't overcrowd).
  • Cook for 15-18 minutes, flipping halfway.
  • Check that the internal temp reaches 165°F (75°C).

Rest & Serve

  • Let the chicken rest for 5 minutes before cutting.
  • Serve with roasted veggies, salad, or mashed potatoes.

Notes

  • Make it extra crispy – Coat with panko breadcrumbs before air frying.
  • No air fryer? – Bake at 400°F (200°C) for 25-30 minutes.
  • Filling Ideas – Swap sun-dried tomatoes for mushrooms, ham, or jalapeños.
  • Dipping Sauce? – Try ranch, honey mustard, or marinara!
