Ingredients
  

  • 1 cup old fashioned oats
  • 3/4 cup carrots finely shredded
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/3 cup unsweetened coconut shredded
  • 1/4 cup walnuts chopped
  • 2 tbsp raisins
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Add almond butter, honey, and vanilla extract to a large mixing bowl. Stir until smooth and creamy.
  • Add oats, shredded carrots, shredded coconut, walnuts, raisins, cinnamon, nutmeg, and salt. Stir well until all ingredients are fully combined and evenly coated.
  • Place the bowl in the refrigerator for 15 to 20 minutes to help the mixture firm up.
  • Scoop small portions of the mixture using a spoon or cookie scoop. Roll gently between your hands to form bite-sized energy balls.
  • Place the energy balls onto a parchment-lined tray or plate.
  • Chill the rolled energy balls for another 10 to 15 minutes before serving for the best texture.
  • Store in an airtight container in the refrigerator until ready to enjoy.
