These Chicken Caesar Salad Pinwheels are crunchy, cheesy, and full of Caesar flavor. They are perfect for lunchboxes, quick snacks, parties, or meal prep. Kids and adults love them and they are so easy to make even on busy days.

Ingredients
  

  • 2 tortillas large flour
  • 1 cup chicken cooked shredded (rotisserie chicken works great)
  • ½ cup Romaine lettuce finely chopped
  • ½ cup Parmesan cheese shredded
  • ¼ cup Caesar dressing or more if you like it extra creamy
  • 1 garlic clove small minced (optional)
  • Salt to taste
  • pepper to taste

Instructions
 

Step 1: Prep the Chicken

  • Shred your cooked chicken into small pieces. Rotisserie chicken works great because it is juicy and easy.

Step 2: Mix the Filling

  • In a medium bowl, mix chicken, chopped lettuce, Parmesan, Caesar dressing, and garlic if using. Add a pinch of salt and pepper. Stir until everything is coated.

Step 3: Spread the Filling

  • Lay the tortillas flat on a clean surface. Spread half of the chicken Caesar mixture on each tortilla, leaving a small border around the edges.

Step 4: Roll the Tortillas

  • Roll the tortillas tightly, like a soft burrito. Keep it snug but do not squish it too much.

Step 5: Slice Into Pinwheels

  • Use a sharp knife to cut each roll into 1-inch pinwheels. You should get about 6–8 per tortilla.

Step 6: Serve or Store

  • Serve immediately or pack in an airtight container for lunchboxes or meal prep. They stay fresh for up to 2 days in the fridge.

  • Toast tortillas lightly before filling for extra crunch.
