Chocolate Energy Balls

- 1 1/2 c rolled oats
- 1/2 c creamy peanut butter
- 1/3 c honey
- 1/4 c unsweetened cocoa powder
- 1/3 c mini chocolate chips
- 1 tsp vanilla extract
- 2 tbsp ground flaxseed
- 1 tbsp chia seeds
- 1/4 tsp salt
Prepare a large mixing bowl and line a tray or plate with parchment paper. Measure all ingredients before starting.
Add the rolled oats, cocoa powder, ground flaxseed, chia seeds, and salt to the bowl. Stir until all the dry ingredients are evenly mixed and the cocoa powder is fully combined with the oats.
Add the peanut butter, honey, and vanilla extract to the bowl. Stir slowly at first, then continue mixing until the ingredients become thick, sticky, and fully combined. Scrape down the sides of the bowl as needed.
Fold the mini chocolate chips into the mixture until evenly spread throughout.
Cover the bowl and place it in the refrigerator for 15 to 20 minutes so the mixture can firm up and become easier to roll.
Remove the chilled mixture from the refrigerator. Scoop small portions and roll between your hands to form bite-sized balls. If needed, lightly dampen your hands to prevent sticking.
Place the finished energy balls on the prepared tray and refrigerate for another 10 to 15 minutes before serving for the best texture.
- Add extra oats if the mixture feels too sticky.

- Store in an airtight container in the refrigerator for up to 1 week.
