Ingredients
  

  • 2 cups chicken cooked and shredded
  • 4 tbsp pesto sauce
  • 2 tbsp mayonnaise
  • 4 slices bread
  • 1 cup lettuce
  • 1 tomato sliced
  • 4 slices cheese
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Add shredded chicken to a mixing bowl. Add pesto sauce and mayonnaise. Mix slowly until all the chicken is evenly coated. Taste and add salt and pepper if needed. The mixture should be creamy but not too wet.
  • Place bread slices on a clean surface. Spread a thin layer of mayonnaise if desired. This adds extra moisture and flavor while helping the sandwich stay soft.
  • Spoon the chicken pesto mixture onto two slices of bread. Spread it evenly using the back of a spoon, making sure it covers the surface without spilling over too much.
  • Add lettuce leaves on top of the chicken mixture. Place tomato slices evenly, then add cheese slices. Make sure the layers are balanced so the sandwich holds together well.
  • Place the remaining bread slices on top. Press gently to secure the sandwich. Cut in half using a sharp knife. Serve immediately or wrap tightly and refrigerate until ready to eat.
