Cold Veggie Sandwich

- 4 slices bread
- 1/2 cup cucumber slices
- 1/2 cup tomato slices
- 1/4 cup lettuce shredded
- 1/4 cup carrot grated
- 2 tbsp mayonnaise
- 1 tbsp butter
- 1/4 tsp salt
- 1/4 tsp black pepper
Place bread slices on a clean surface and spread butter evenly on one side of each slice, making sure to cover the edges.
Spread mayonnaise on top of the butter layer in a thin, even coat.
Arrange cucumber slices evenly on one slice of bread to form the base layer.
Add tomato slices on top, spreading them out to avoid too much moisture in one spot.
Add shredded lettuce evenly across the surface, followed by grated carrot sprinkled loosely.
Season the vegetables with salt and black pepper evenly.
Place the second slice of bread on top with the spread side facing down and press gently.
Cut the sandwich in half and serve fresh or wrap for later.
