Cold Veggie Sandwich

Ingredients
  

  • 4 slices bread
  • 1/2 cup cucumber slices
  • 1/2 cup tomato slices
  • 1/4 cup lettuce shredded
  • 1/4 cup carrot grated
  • 2 tbsp mayonnaise
  • 1 tbsp butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Place bread slices on a clean surface and spread butter evenly on one side of each slice, making sure to cover the edges.
  • Spread mayonnaise on top of the butter layer in a thin, even coat.
  • Arrange cucumber slices evenly on one slice of bread to form the base layer.
  • Add tomato slices on top, spreading them out to avoid too much moisture in one spot.
  • Add shredded lettuce evenly across the surface, followed by grated carrot sprinkled loosely.
  • Season the vegetables with salt and black pepper evenly.
  • Place the second slice of bread on top with the spread side facing down and press gently.
  • Cut the sandwich in half and serve fresh or wrap for later.

Notes

  • Use firm tomatoes and pat them dry before adding
  • Butter helps keep the bread from getting soggy
  • Best served fresh for maximum crunch and flavor
