Cottage Cheese Tortilla Wrap Recipe

This cottage cheese tortilla wrap is a high protein, easy meal made with a soft cooked cottage cheese egg layer combined with a tortilla and fresh fillings. It is perfect for lunch, dinner, or meal prep.

Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1 tbsp parsley
  • 1 tbsp chives
  • 1 large tortilla
  • Lettuce optional
  • Tomato optional
  • Cucumber optional
  • Avocado optional
  • Chicken or turkey optional

Instructions
 

  • Add cottage cheese, eggs, garlic powder, onion powder, salt, parsley, and chives into a blender. Blend until completely smooth and creamy.
  • Heat a nonstick pan over medium low heat and lightly grease it with olive oil.
  • Pour the blended mixture into the pan and spread evenly into a thin layer. Cook until set and lightly golden.
  • Warm the tortilla slightly to make it soft and flexible.
  • Place the cooked cottage cheese layer onto the tortilla and spread evenly.
  • Add lettuce, tomato, cucumber, avocado, and protein on top.
  • Roll the tortilla tightly, slice, and serve immediately.

Notes

  • Smooth blending is important for structure
  • Do not overfill or the wrap may tear
  • Best eaten fresh but can be stored for up to 2 days
