Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup cucumber grated and fully squeezed
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove very finely minced
  • 1 tbsp fresh dill finely chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  • Wash the cucumber well and pat it dry
  • Grate the cucumber finely using a grater
  • Place the grated cucumber in a clean cloth and squeeze out all excess water very well
  • Transfer the squeezed cucumber to a bowl and set aside
  • In a separate mixing bowl, add the Greek yogurt, olive oil, and lemon juice
  • Whisk or stir until the mixture becomes smooth, creamy, and well combined
  • Add the prepared cucumber into the yogurt mixture
  • Add the finely minced garlic, chopped dill, salt, and black pepper
  • Mix everything slowly until all ingredients are evenly combined
  • Make sure the cucumber and herbs are spread throughout the dip
  • Taste the dip and adjust salt, lemon juice, or garlic if needed
  • Mix again after adjusting flavors
  • Cover the bowl and place it in the refrigerator for at least 30 minutes
  • This helps the flavors blend and improves the texture
  • Remove from the fridge and stir gently before serving
  • Drizzle a little olive oil on top if desired

Notes

  • Removing cucumber water is key for thick texture
  • Use full fat yogurt for a richer dip
  • Fresh garlic and herbs give the best flavor
  • Chilling improves taste and consistency
  • Best served cold
