Ingredients

  • 1 can (10 oz) Rotel drained
  • 1 cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup cheddar cheese shredded
  • 8 oz cream cheese softened
  • 1/2 cup mayonnaise

Instructions

  • Remove the cream cheese from the refrigerator and allow it to soften at room temperature for 20 to 30 minutes. Drain the Rotel completely using a fine strainer to remove excess liquid.
  • In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Use a hand mixer or spoon to blend until smooth and creamy with no lumps.
  • Add the ranch seasoning mix to the bowl. Stir thoroughly until the seasoning is evenly mixed into the creamy base.
  • Add the drained Rotel and shredded cheddar cheese. Gently fold the mixture until all ingredients are evenly combined.
  • Cover the bowl tightly with plastic wrap or a lid. Place in the refrigerator and chill for at least 1 hour to allow the flavors to develop.
  • Remove the dip from the refrigerator and stir well. Taste and adjust seasoning if needed. Add a small amount of sour cream if a thinner consistency is preferred.
  • Transfer to a serving bowl and serve cold with chips, crackers, or fresh vegetables.

Notes

  • Drain Rotel thoroughly to prevent watery dip
  • Use softened cream cheese for smooth texture
  • Chill for best flavor and consistency
  • Adjust spice level using mild or hot Rotel
