- 1 can (10 oz) Rotel drained
- 1 cup sour cream
- 1 packet (1 oz) ranch seasoning mix
- 1 cup cheddar cheese shredded
- 8 oz cream cheese softened
- 1/2 cup mayonnaise
Remove the cream cheese from the refrigerator and allow it to soften at room temperature for 20 to 30 minutes. Drain the Rotel completely using a fine strainer to remove excess liquid.
In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Use a hand mixer or spoon to blend until smooth and creamy with no lumps.
Add the ranch seasoning mix to the bowl. Stir thoroughly until the seasoning is evenly mixed into the creamy base.
Add the drained Rotel and shredded cheddar cheese. Gently fold the mixture until all ingredients are evenly combined.
Cover the bowl tightly with plastic wrap or a lid. Place in the refrigerator and chill for at least 1 hour to allow the flavors to develop.
Remove the dip from the refrigerator and stir well. Taste and adjust seasoning if needed. Add a small amount of sour cream if a thinner consistency is preferred.
Transfer to a serving bowl and serve cold with chips, crackers, or fresh vegetables.
