Preheat the oven to 300°F (150°C). Line a large baking tray with parchment paper and set aside.
In a clean mixing bowl, whisk the egg white until it becomes foamy. This step helps the coating stick to the nuts evenly.
Add the vanilla extract to the egg white and mix gently to combine the flavor.
Add the mixed nuts into the bowl. Stir well until all nuts are evenly coated with the egg white mixture.
In another bowl, combine granulated sugar, brown sugar, cinnamon, and salt. Mix thoroughly so the spices are evenly distributed.
Sprinkle the sugar mixture over the coated nuts. Toss and stir until each nut is fully coated with the sugar mixture.
Spread the coated nuts onto the prepared baking tray in a single, even layer. Make sure they are not overcrowded.
Bake for 25 to 30 minutes, stirring once halfway through to ensure even cooking and prevent sticking.
Remove from the oven and allow the nuts to cool completely on the tray. The coating will harden as they cool, creating a crisp texture.
Once fully cooled, break apart any clusters if needed and store in an airtight container.
