Ingredients
  

  • 2 cups chicken cooked, shredded or chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/2 cup celery finely chopped
  • 1/3 cup red onion finely chopped
  • 1/2 cup grapes or apples chopped
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large tortillas or wraps
  • Lettuce leaves as needed

Instructions
 

  • Place shredded chicken in a large bowl and set aside.
  • In a separate bowl, mix mayonnaise, Greek yogurt, lemon juice, salt, and pepper until smooth.
  • Add chicken to the dressing and mix until fully coated.
  • Stir in celery, onion, and grapes or apples gently.
  • Lay tortilla flat and place lettuce leaves in the center.
  • Add chicken salad mixture over lettuce evenly.
  • Fold sides and roll tightly into a wrap.
  • Cut in half and serve fresh or pack for later use.

Notes

  • Rotisserie chicken works great for a faster and easier meal.
  • Greek yogurt can replace some or all of the mayonnaise for a lighter version.
  • Warm tortillas for a few seconds before rolling to help prevent cracking or tearing.
  • Do not overfill the wraps or they may be harder to roll and hold together.
  • Chill the chicken salad mixture for 15–30 minutes before assembling for even better flavor.
  • Grapes add sweetness, but diced apples work well as a substitute.
