Fiesta Pinwheels

- 4 large flour tortillas
- 8 oz cream cheese softened
- 1 cup cheddar cheese shredded
- 1/2 cup sour cream
- 1/2 cup bell peppers diced
- 1/4 cup green onions chopped
- 1/4 cup corn drained
- 1/4 cup black beans rinsed
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
Let the cream cheese soften at room temperature until smooth and easy to mix.
In a large bowl, combine cream cheese and sour cream. Mix slowly until the texture is creamy and free of lumps.
Add chili powder, garlic powder, and salt. Stir well so the spices are evenly mixed into the base.
Add shredded cheese, bell peppers, green onions, corn, and black beans. Fold gently until all ingredients are evenly coated.
Lay one tortilla flat on a clean surface. Add a portion of the filling and spread evenly across the entire tortilla.
Roll the tortilla tightly into a log shape, making sure the filling stays inside and the roll is firm.
Wrap the rolled tortilla in plastic wrap and place in the fridge for at least 1 hour to firm up.
Remove from the fridge and unwrap. Place on a cutting board and slice into even pinwheels using a sharp knife.
Arrange on a plate and serve fresh.
