Matcha Energy Balls

These easy matcha energy balls are chewy, naturally sweet, and packed with delicious green tea flavor. Made with oats, dates, almond butter, and matcha powder, these no bake energy bites are perfect for meal prep, healthy snacks, quick breakfasts, or afternoon treats.

Ingredients
  

  • 1 c rolled oats
  • 1 c soft pitted dates
  • 1/2 c almond butter
  • 2 tsp matcha powder
  • 2 tbsp coconut shredded
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 to 2 tbsp water if needed
  • Pinch of salt

Instructions
 

  • Add the pitted dates to a food processor and blend until they form a sticky paste with no large chunks remaining.
  • Add the rolled oats, almond butter, matcha powder, shredded coconut, chia seeds, vanilla extract, and salt to the food processor.
  • Blend the mixture until fully combined. The texture should look crumbly but stick together easily when pressed with your fingers.
  • If the mixture feels dry, add 1 tablespoon of water at a time and blend again until the mixture becomes soft enough to roll.
  • Scoop small portions of the mixture and roll into bite-sized balls using your hands or a cookie scoop.
  • Place the energy balls on a parchment-lined tray or plate.
  • Refrigerate for at least 20 minutes until firm and chilled.
  • Serve immediately or store in an airtight container in the refrigerator.

Notes

  • If your dates are dry, soak them in warm water for 10 minutes before blending.
  • Store in the refrigerator for up to 1 week.
  • Freeze for up to 2 months in a sealed container.
  • Roll the balls in extra coconut or matcha powder for extra flavor and texture.
  • Adjust the amount of matcha powder depending on how strong you want the green tea flavor.
