- 1 baguette sliced into ½-inch rounds
- 2 tbsp olive oil plus extra for drizzling
- 2 cups cherry tomatoes diced
- ½ cup crumbled feta cheese
- ¼ cup Kalamata olives chopped
- ¼ cup red onion finely diced
- 2 tbsp fresh basil chopped
- 1 tbsp balsamic glaze
- 1 clove garlic minced
- Salt & pepper to taste
Mix the Topping
In a bowl, combine tomatoes, feta, olives, red onion, basil, garlic, olive oil, salt, and pepper. Stir well.
- Make the topping ahead of time, but don’t assemble until ready to serve.
