Ingredients
  

  • 1 baguette sliced into ½-inch rounds
  • 2 tbsp olive oil plus extra for drizzling
  • 2 cups cherry tomatoes diced
  • ½ cup crumbled feta cheese
  • ¼ cup Kalamata olives chopped
  • ¼ cup red onion finely diced
  • 2 tbsp fresh basil chopped
  • 1 tbsp balsamic glaze
  • 1 clove garlic minced
  • Salt & pepper to taste

Instructions
 

Toast the Bread

  • Preheat oven to 375°F (190°C). Place baguette slices on a baking sheet, brush with olive oil, and toast for 8-10 minutes until golden brown.

Mix the Topping

  • In a bowl, combine tomatoes, feta, olives, red onion, basil, garlic, olive oil, salt, and pepper. Stir well.

Assemble the Bruschetta

  • Spoon the tomato mixture onto each toasted baguette slice. Drizzle with balsamic glaze for extra flavor.

Serve & Enjoy

  • Serve immediately while the bread is still crispy. Enjoy this bite-size appetizer with friends, or eat three in a row while standing in your kitchen. No judgment!

Notes

  • Make the topping ahead of time, but don’t assemble until ready to serve.
  • Swap feta for goat cheese or mozzarella if preferred.
