Cuisine American
- 1 cup old fashioned oats
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1/4 cup mini chocolate chips
- 2 tbsp ground flaxseed
- 1 tsp vanilla extract
- Pinch of salt
Add the peanut butter, honey, vanilla extract, and salt to a medium mixing bowl. Stir until smooth and creamy with no honey streaks remaining.
Add the oats, ground flaxseed, and mini chocolate chips to the bowl. Mix slowly until every ingredient is evenly coated and the mixture becomes thick and sticky.
Transfer the bowl to the refrigerator and chill for 20 minutes. This helps the mixture firm up and makes rolling easier.
Scoop small portions of the chilled mixture using a spoon or cookie scoop. Roll gently between your hands to form small balls.
Place the energy balls onto a parchment-lined tray or plate. Refrigerate again for 10 to 15 minutes before serving for the best texture.
Store leftovers in an airtight container in the refrigerator or freezer.
- Add extra oats if the mixture feels too wet.
- Slightly wet hands help prevent sticking while rolling.
- Mini chocolate chips work best for even texture.
- These energy balls can easily be customized with nuts, coconut, seeds, or protein powder.
