This Rotel dip with ground beef is creamy, cheesy, and full of flavor. It is an easy party dip made with melted cheese, seasoned beef, and tomatoes with green chilies.

Ingredients
  

  • 1 tbsp. olive oil
  • 1 lb. ground beef
  • 1 small yellow onion diced
  • 1 32 oz. processed cheese block, cubed
  • 2 10 oz. cans Rotel diced tomatoes with green chilies
  • 1/2 tsp. chipotle chili powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. smoked paprika
  • Chopped cilantro optional

Instructions
 

  • Heat olive oil in a skillet over medium heat. Cook ground beef and onion until browned. Drain grease.
  • Add Rotel tomatoes with liquid and stir.
  • Add cubed cheese and cook on low heat.
  • Stir until cheese melts and the dip becomes creamy.
  • Add chipotle chili powder, garlic powder, and smoked paprika.
  • Stir well and serve warm with chips.
