These Southwest chicken pinwheels are a creamy, flavorful, and easy no-cook appetizer made with shredded chicken, cheese, beans, and taco seasoning. Rolled in soft tortillas and sliced into bite-sized pieces, they are perfect for parties, snacks, or make-ahead meals.

Ingredients
  

  • 2 cups chicken cooked and shredded
  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1 cup cheddar cheese shredded
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup corn
  • 1/4 cup red bell pepper diced
  • 2 tbsp green onions sliced
  • 1 tbsp taco seasoning
  • 4 large flour tortillas

Instructions
 

  • Add softened cream cheese and sour cream to a large bowl. Mix until completely smooth and creamy with no lumps remaining.
  • Stir in taco seasoning and mix until evenly combined throughout the mixture.
  • Add shredded chicken, shredded cheese, black beans, corn, diced bell pepper, and green onions. Fold everything together until the filling is thick and evenly mixed.
  • Lay tortillas flat on a clean surface. Divide the filling evenly between them.
  • Spread the filling across each tortilla in an even layer, leaving a small border around the edges.
  • Roll each tortilla tightly into a log, keeping the shape firm and compact.
  • Wrap each roll in plastic wrap and refrigerate for at least 1 hour to firm up.
  • Remove from the refrigerator, unwrap, and place on a cutting board.
  • Slice into 1-inch pinwheels using a sharp knife, cleaning the blade as needed between cuts.
  • Arrange on a serving plate and serve fresh.

  • Chilling is important for clean slicing and best texture
