Southwest Chicken Pinwheels

- 2 cups chicken cooked and shredded
- 8 oz cream cheese softened
- 1/2 cup sour cream
- 1 cup cheddar cheese shredded
- 1/2 cup black beans drained and rinsed
- 1/2 cup corn
- 1/4 cup red bell pepper diced
- 2 tbsp green onions sliced
- 1 tbsp taco seasoning
- 4 large flour tortillas
Add softened cream cheese and sour cream to a large bowl. Mix until completely smooth and creamy with no lumps remaining.
Stir in taco seasoning and mix until evenly combined throughout the mixture.
Add shredded chicken, shredded cheese, black beans, corn, diced bell pepper, and green onions. Fold everything together until the filling is thick and evenly mixed.
Lay tortillas flat on a clean surface. Divide the filling evenly between them.
Spread the filling across each tortilla in an even layer, leaving a small border around the edges.
Roll each tortilla tightly into a log, keeping the shape firm and compact.
Wrap each roll in plastic wrap and refrigerate for at least 1 hour to firm up.
Remove from the refrigerator, unwrap, and place on a cutting board.
Slice into 1-inch pinwheels using a sharp knife, cleaning the blade as needed between cuts.
