Ingredients
  

  • 1 large tortilla
  • 3/4 cup egg whites
  • 1 cup fresh spinach
  • 1/4 cup feta cheese
  • 1 teaspoon olive oil
  • 1 tablespoon onion diced
  • 1 tablespoon red bell pepper diced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Pinch of salt

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Cook onion and red bell pepper until soft and fragrant.
  • Add spinach and cook until fully wilted.
  • Pour in egg whites and stir gently.
  • Cook until egg whites are soft, fluffy, and fully set.
  • Season with garlic powder, salt, and black pepper.
  • Remove from heat and stir in feta cheese.
  • Warm tortilla in a dry pan until soft and flexible.
  • Add filling to the center of tortilla.
  • Fold sides and roll tightly into a wrap.
  • Toast wrap in skillet until lightly golden.
  • Slice and serve warm.

Notes

  • Whole wheat tortillas add extra fiber
  • Add hot sauce for extra flavor
  • Best served fresh but also good for meal prep
  • Do not overcook eggs for best texture
