Ingredients
  

  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup bell peppers any color, sliced
  • 1 cup zucchini sliced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce or tamari if gluten-free
  • 1 tablespoon olive oil or sesame oil
  • 1 tablespoon honey optional for sweetness
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder or fresh grated ginger
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

  • Cut the chicken into bite-sized pieces. Slice the bell peppers, zucchini, and broccoli into pieces of equal size.

Season the Chicken and Veggies:

  • In a large bowl, toss the chicken and veggies with olive oil, soy sauce, honey (if using), garlic powder, ginger, salt, and pepper. Mix well to coat everything evenly.

Preheat the Air Fryer:

  • Set your air fryer to 375°F (190°C) and preheat for 3 minutes.

Cook in the Air Fryer:

  • Place the chicken and veggie mixture into the air fryer basket, ensuring it’s not overcrowded. Cook for 10-12 minutes, shaking the basket halfway through.

Check for Doneness:

  • Ensure the chicken reaches an internal temperature of 165°F (74°C) and the veggies are tender but slightly crisp.

Serve:

  • Serve hot over rice, noodles, or as is. Add extra soy sauce or sesame seeds if desired.
