Ingredients
  

  • 1 cup shredded zucchini
  • 1 cup all-purpose flour
  • ½ cup sugar or honey
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 egg
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Optional: ¼ cup chocolate chips or nuts

Instructions
 

Mix Wet Ingredients:

  • In a bowl, whisk egg, sugar, oil, and vanilla. Stir in shredded zucchini.

Mix Dry Ingredients:

  • In another bowl, whisk flour, baking soda, baking powder, cinnamon, and salt.

Combine:

  • Slowly mix the dry ingredients into the wet. Don’t overmix! Fold in chocolate chips or nuts if using.

Prep for Air Frying:

  • Grease a 6-inch cake pan. Pour in the batter.

Bake:

  • Air fry at 320°F (160°C) for 20-25 minutes. Check with a toothpick—it should come out clean.

Cool & Enjoy:

  • Let cool before slicing. Serve as is or with a dusting of powdered sugar!

Notes

  • Don’t squeeze the zucchini—it keeps the cake moist!
  • Store in an airtight container for up to 3 days at room temp or 1 week in the fridge.
