Date Energy Balls

These soft and chewy Date Energy Balls are an easy no bake snack made with oats, peanut butter, coconut, and naturally sweet dates. Perfect for meal prep, quick breakfasts, lunch boxes, and healthy homemade snacking.

Ingredients
  

  • 1 ½ cups pitted dates
  • 1 cup rolled oats
  • ½ cup peanut butter
  • ¼ cup coconut shredded
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp mini chocolate chips

Instructions
 

  • Remove pits from the dates if needed. If the dates feel dry, soak them in warm water for 10 minutes, then drain and dry well.
  • Add the dates to a food processor and pulse until they break into small sticky pieces.
  • Add the rolled oats, peanut butter, shredded coconut, chia seeds, vanilla extract, and salt to the processor.
  • Blend for 1 to 2 minutes until the mixture becomes thick, sticky, and fully combined. Scrape down the sides of the bowl if needed.
  • Transfer the mixture to a bowl and stir in the mini chocolate chips by hand.
  • Scoop small portions of the mixture and roll into bite-sized balls using your hands.
  • Place the energy balls on a parchment-lined tray or plate.
  • Refrigerate for 20 minutes until firm and chilled.
  • Serve immediately or store in an airtight container in the refrigerator.

Notes

  • Soft Medjool dates work best for this recipe.
  • Add extra oats if the mixture feels too sticky.
  • Wet your hands lightly while rolling to prevent sticking.
  • Store refrigerated for up to 1 week.
  • Freeze for up to 2 months.
